Description

Oh, how many of these and similar cakes I made over the summer. In this cake, I really like the sauce used for spreading between the crepes. It’s not regular mayonnaise, but a mixture of sour cream, mustard, lemon juice, garlic, salt, and pepper. It turns out very tasty, and the sauce pairs perfectly with zucchini crepes. It’s great that you can make the sauce spicier or milder depending on your taste preferences. And read my detailed recipe below. The appetizer is ready. Serve immediately.

    Prepare all the necessary ingredients. Be sure to use young zucchini with green skin and no seeds.

    Grate the zucchini on a fine grater.

    Onions can also be grated on a grater, chopped in a food processor, or simply finely chopped with a knife.

    Add eggs, salt, pepper, and your favorite spices to the vegetable mixture. Mix until homogeneous.

    Now add half of the flour first and pour in 1 tablespoon of vegetable oil, then mix. If the mixture is still a bit thin, add the remaining flour—the amount depends on how much liquid the zucchini release.

    Heat 1 tablespoon vegetable oil in a skillet. Then place about 4 tablespoons of zucchini batter in the center and quickly spread it with a spoon across the skillet to form a thin pancake the size of a plate. Fry on both sides for 2–3 minutes until golden.

    I ended up with 7 zucchini pancakes. They’re very tasty as they are, but as a cake they’ll be mega delicious.

    Now let's make the sauce. Grate the cheese on a fine grater. Mix the cheese with sour cream, mustard, lemon juice, and pinches of salt and pepper. Add a few cloves of garlic, pressed in.

    Mix the resulting mixture well.

    Cut the tomatoes into thin slices. We will use them both for layering and for decorating the cake.

    Start assembling the cake. Place the first pancake on a plate of the appropriate size and spread it with the sour cream sauce.

    Arrange the tomato slices. You don't have to add a tomato layer after every pancake; for example, you can do it every other one, or make such a layer only once, in the middle.

    Let the finished cake rest in the refrigerator for 1–2 hours so it can soak through. It will taste best then.
