
Zucchini pancakes
Description
Traditionally, draniki are pancakes with a golden, crispy crust, fried in a pan with vegetable oil. They can be served for breakfast or as a snack. Draniki can be made from potatoes, zucchini, or a mix of several vegetables. They are served with sour cream or any other sauce of choice, and always hot.

1. Wash the zucchini and grate them on a fine grater, then drain the mass in a colander or simply squeeze with hands. Add finely grated onion to the zucchini.

2. Into a bowl with zucchini and onion, I crack an egg, add salt and pepper to taste, add flour, and mix thoroughly.

3. Place a frying pan on the stove, add a little vegetable oil and heat. Spoon the mixture onto the pan and fry on both sides until golden and crispy.

4. I transfer the cooked pancakes onto a paper towel first to remove excess oil, then place them on a plate, sprinkle with herbs and grated cheese, and serve with sour cream.
