
Zucchini Ragout for Winter
Description
Winter preserve made at home. I recommend making zucchini stew for winter in large batches right away, preferably with helpers. You will have to peel and chop a whole mountain of vegetables, and in addition, fry the vegetables separately. Zucchini stew for winter runs out very quickly. You can eat it as an appetizer or add it to braised meat. Good luck! The preserve is ready for winter storage.

Prepare the vegetables.

Peel and cut the zucchini.

Clean and cut the bell pepper.

Sauté the onion in hot oil until translucent.

Thinly shred the carrots and add to the onion. Sauté for 5–7 minutes.

Put the onion and carrot in a deep pot.

Add the pepper and grated tomatoes, and simmer for half an hour over low heat.

Add the fried zucchini and all the spices. Bring to a boil and simmer for another 30 minutes. Add the vinegar at the very end.

Divide the ragout among sterilized jars and seal.
