You can use any kind of ground meat—I used a pork and beef mix, but a lighter option like chicken or turkey works well too. Use any mushrooms you like; I used frozen button mushrooms. Choose young zucchinis without large seeds, if possible. All ingredients are simple and readily available, and the result will surely delight you. Prepare all the ingredients.

For the filling, dice the onion and carrots.

Sauté the vegetables until soft.

Add the sliced and thawed mushrooms. Fry together until the moisture has evaporated.

Add the minced meat, salt and pepper to taste.

Sauté everything together for a few more minutes, breaking up the meat clumps with a spatula. Do not cook for too long; it is enough just for the meat to turn white.

Add the rice cooked to half-done. Mix and remove the skillet from the stove. Let it cool slightly. Add the chopped herbs and two eggs.

Cut the zucchini lengthwise into long slices about 1 cm thick. It's best to use young and long ones. Bake the zucchini in batches in the microwave for about 2-3 minutes. This is necessary to make the vegetables flexible and prevent them from breaking.

Beat the remaining egg with a pinch of salt and brush one side of the zucchini slices with it.

Place the zucchini in a greased baking dish, with the egg-coated side facing up. Arrange the zucchini so that the slices cover the entire surface of the dish. Then begin layering the filling on top of the zucchini.
