
Zucchini and Eggplant Caviar
Description
A tasty appetizer for any gathering. Squash and eggplant caviar is very easy to make. It turns out very tasty; by the way, you can add your favorite spices and fresh herbs. Serve this caviar as an appetizer or snack with a piece of fresh bread, and also with meat and fish.

Wash two medium-sized zucchini and cut them into cubes. Young zucchini do not need to be peeled. Place the zucchini in a deep skillet.

Wash two small eggplants, peel them, and dice them. Add them to the pan with the zucchini.

Peel the onion, wash it, and dice it into small cubes. Add to the skillet.

Wash the carrots, peel them, and cut them as desired. You can also grate them. Add them to the skillet with the remaining vegetables.

Wash the tomatoes, pass them through a meat grinder or grate them. Add to the skillet.

Pour refined sunflower oil into the pan, season with salt to taste, and add sugar. Cover the pan with a lid and simmer over medium heat until all the vegetables are tender, 30–40 minutes.
