Zucchini Caviar in a Thermomix

Description

A simple way to make a batch ahead. You know how fast the Thermomix works. Maybe writing this recipe will take me longer than the cooking :) 1. First, peel and seed the zucchini. Cut them into cubes. 2. Then dice the tomatoes. 3. Add the tomatoes, zucchini, and garlic to the Thermomix, set speed 4, and chop for 3–5 seconds. 4. Peel the onion and carrot. Seed the bell pepper. Cut into pieces. 5. Chop them in the Thermomix too, this time at speed 6. 6. Without removing the last batch of vegetables, add vegetable oil, salt, and spices. Use your favorites and don’t hold back. I don’t recommend rosemary—it doesn’t go well with tomato. Coriander or marjoram are fine. Indian or Caucasian spice blends work too, if you like those. And pepper, of course. 7. Set the Thermomix to 100°C and add the vegetables. Let them sauté for five minutes. 8. Then add the zucchini, tomatoes, and garlic—the first vegetable mixture. 9. Mix everything. Set Varoma mode and simmer for 20 minutes at speed 2. 10. After 20 minutes, blend the zucchini caviar at speed 7 or 9 for 10 seconds. 11. You can put it straight into jars and seal them. If you’re worried about how well the caviar will keep, add 1–2 teaspoons of 9% vinegar to each jar first. Pack the hot zucchini caviar into hot sterilized jars. Enjoy! Serve at the table or store in the pantry.
