Zucchini Caviar in the Microwave

Suitable for both holidays and everyday meals. Zucchini caviar is the perfect vegetable appetizer that can be served for breakfast, lunch, or dinner. You can take it with you on outings or picnics, serving it alongside roasted meat, kebab, or sausage. It prepares very quickly, especially if you have a handy helper in your kitchen like a microwave. Serve the appetizer at the table.

    Prepare the listed ingredients. Choose young zucchini without tough skin or seeds inside. Peel and rinse all vegetables in water.

    Cut the zucchini into slices, then into medium or small cubes, and transfer them to a deep microwave-safe baking dish. The dish must not have gold or silver patterns!

    Cut the carrots and onion into the same size cubes. Add to the container.

    Pour in the water and place the container in the microwave for 5 minutes at the highest power setting. Be sure to cover the container on top with a special lid or a plate. Do not add more water, as the zucchini will release liquid on their own.

    After the specified time, remove the container, season with salt and pepper. If there is too much liquid, drain it.

    Add the tomato paste, vinegar, and sugar. Be sure to add sugar—it neutralizes the acidity of the vinegar and tomato paste. Place the container in the microwave for another 3–5 minutes.
