
Zucchini Caviar in Jars
Description
Perfect for winter pantry stock. For the caviar, mince the vegetables, boil them, pack into sterile jars, and seal with a canning key. Good luck. Store in a cool, dark place.
Instructions

Step 1

Run the zucchini, onion, garlic, and bell pepper through a meat grinder. Transfer to a heavy-bottomed pot and cook for 30 minutes.

Grind the tomatoes using a meat grinder (or blender).

Add the tomatoes to the zucchini and simmer for another 30 minutes.

Add all the spices, oil, and vinegar. Optionally add any herbs: dill, parsley. Cook for another 10 minutes.

Caviar is ready!

Take sterile jars and lids. Spread out the caviar and seal with a canning key. Turn the jars upside down and leave them to cool in that position. Afterward, store in a cool place — such as a cellar or pantry.
