Zucchini caviar with vinegar

Description

Homemade preserves keep for a long time. I'm sharing a classic zucchini caviar recipe with vinegar! You get a filling but low-calorie appetizer that can be eaten hot or cold. You can also make a larger batch and put it up for winter: then you'll be able to enjoy delicious caviar anytime. The preserve is ready for winter storage.

    1. Cut the zucchini however you like, fry in vegetable oil until done on both sides. Salt to taste.

    2. Then sauté the onion and carrot.

    3. Place the tomatoes, zucchini, onion and carrot, and garlic in the blender bowl. Blend until smooth, then add salt, sugar, and pepper. Refrigerate for two to three hours.

    4. If you are preserving for winter, while still hot divide the mixture among sterilized jars, pour vinegar on top of each jar, and seal with sterilized lids. In winter, take them out—and serve!
