Zucchini Caviar with Sauce

Description

Perfect for winter pantry stocks. Surprisingly, homemade zucchini caviar with sauce turns out not only very aromatic and juicy, but also similar to the store-bought kind whose taste many people have known since childhood. Use quality sauce and mayonnaise—and you'll get a tasty appetizer and a winter preserve. Jars keep for up to a year in a cool place.

    1. It is best to use young zucchini; however, even they should preferably be peeled beforehand. If the seeds are large, carefully remove the core.

    2. Peel and onion and cut it into halves or quarters.

    3. Run the vegetables through a meat grinder.

    4. Place them in a suitably sized pot and put it over the heat. After it comes to a boil, simmer for about 2.5–3 hours.

    5. When most of the water has evaporated, you can add vegetable oil, salt, pepper, sugar, and mayonnaise. Add "Satsabeli" and tomato paste to the pot. Mix everything thoroughly well.

    6. Simmer the zucchini caviar with sauce at home for about another 1 hour, stirring occasionally.

    7. Half an hour before it’s done, prepare the jars: wash them, sterilize them, and dry them. Divide the caviar among the jars, cover with sterilized lids, and seal.
