
Zucchini caviar with flour

We begin cooking with the zucchini. Peel them and cut the vegetable into medium-sized pieces. Then set up the meat grinder and run the vegetables through it until you have a uniform mass. Naturally, if you have a blender, use it.

Having finished with the zucchini, we move on to the onion. As usual, peel it and cut it into pieces of a size that is convenient for you. After that, sauté the onion in a frying pan until golden.

Now prepare the carrots for our zucchini. Rinse them well under water, peel off the outer layer, and grate the vegetable on the coarse side of a grater. Add them to a skillet preheated with oil and sauté lightly for 5 minutes, until they start to release their juice and turn golden.

Prepare the main vegetable mixture. After the zucchini have simmered for 40 minutes, add the sautéed carrots and onion. Mix everything thoroughly and add the tomato paste. All of this needs to simmer over low heat. Once you’ve added the seasoning and paste, simmer everything for another 20 minutes. The zucchini simmer for 1 hour in total.

Now our zucchini has stewed down and everything needs to be mixed with a blender. You may notice that the caviar already has its familiar orange tint, but that’s not all. At this stage we salt it and put it back over low heat.

And now we add our secret ingredient—flour. Take a spoonful of flour and toast it in a dry skillet until brown. Stir the flour often so it does not burn. Pour the finished flour into our caviar—it will give a special flavor.

After that, all you need to do is mix the caviar well and boil it for another 5–10 minutes. The flour will dissolve completely, so don’t worry about lumps. The dish is ready.
