
Zucchini Caviar with Carrots (Meat Grinder)
Description
Perfect for stocking up for winter. I must admit this is one of the best recipes for zucchini spread with carrots made through a meat grinder that I have tried. The vegetables are not fried but stewed over low heat. Instead of the tomato paste popular in other recipes, I used fresh tomatoes. And I was right! The spread turned out delightful. Store in a cool, dark place.

Wash all vegetables thoroughly, peel and remove the seeds, then cut into large pieces.

Now pass the vegetables through the meat grinder.

Transfer to a deep container and place over heat. Braise over medium heat.

Cut the tomatoes into large pieces.

Grate the tomatoes on a coarse grater and remove the skins. Add the tomato pulp to the other vegetables.

Bring the roe to a boil, then reduce the heat. Simmer over low heat for approximately 2.5 hours, stirring occasionally. Then add mayonnaise, vinegar, salt, and sugar to the roe. Mix well and simmer for another 30 minutes.

If you want a puree-like caviar, use an immersion blender and turn the mixture into a smooth puree.

Pack the prepared caviar into sterilized jars and seal with lids. Invert the jars, wrap them in a blanket until completely cooled. Then store in a cool place.
