
Zucchini caviar with mayonnaise and onion
Description
A winter preserve made at home. For the vegetable caviar, chop the vegetables any convenient way (using a meat grinder or food processor). Cook with tomato paste and mayonnaise, then seal in sterile jars. Store in a cool place. Jars keep for up to a year when stored cool.

Let's prepare the ingredients.

Cut all the vegetables into pieces that are convenient for a blender or meat grinder.

Run the zucchini, onion, and garlic through an electric meat grinder. No meat grinder? Use a blender instead.

Simmer the vegetables over a gentle boil for 40–50 minutes. Stir.

After 40 minutes, add mayonnaise, salt, and sugar.

Add tomato paste, ground black pepper, vinegar, and oil. Simmer the roe for another 30 minutes.

The finished caviar has a bright, rich color and flavor.

Prepare sterile jars and lids. Divide the caviar among the jars and seal with a canning key. Turn upside down until completely cool. Done!
