
Zucchini Caviar with Citric Acid

Prepare all the ingredients. Wash all the vegetables beforehand.

Dice the onion, carrots, and zucchini into small cubes.

Heat the vegetable oil in a saucepan or a heavy-bottomed pot. Add the carrots and fry over medium heat until golden, about 5 minutes.

Add the onion and fry for another 5 minutes.

Then add the zucchini. Season with sugar and salt. Stir and simmer covered for about 40 minutes, stirring occasionally.

Then add tomato paste, black ground pepper, and garlic passed through a press.

Mix everything and simmer for another 5 minutes.

Then blend with a blender until smooth. Add citric acid and heat for another 5–7 minutes.

Transfer the hot zucchini caviar into a clean sterilized jar. Seal the lid tightly.

Turn the jar upside down, wrap it in a towel, and leave it until completely cooled. After that, the preserve can be stored in a cool place.
