
Zucchini Caviar (Fried) for Winter
Description
Homemade winter preserve. This fried zucchini caviar for winter is easy to make at home and always turns out delicious and hearty. Personally, I always put up half of the entire batch for winter and eat the other half right away, without leaving the kitchen. So I highly recommend this simple fried zucchini caviar recipe for winter.

Step 1

1. Blanch the tomatoes. Peel them and blend into a puree in a blender. Simmer over low heat in a heavy-bottomed pot with the lid on.

2. Meanwhile, on one skillet sauté the chopped onion and carrots, and on another the zucchini. Don't skimp on the oil. Salt to taste.

3. Next, add the zucchini, onion and carrot, bay leaf, garlic, and spices to the simmering tomato paste. Braise everything together for about an hour. Then purée in a blender.

4. Cool and serve! For winter storage, pack the hot caviar into sterile jars, pour a teaspoon of 9% vinegar on top of each jar, and seal for the winter!
