
Zucchini Caviar
Description
Suitable for both holidays and everyday meals. For this caviar, be sure to use young zucchini with green skin. Any-fat mayonnaise will work; you can even replace it with sour cream. Ketchup can be used instead of tomato paste.

Prepare the ingredients.

Wash the zucchini, trim the ends, and dice the rest.

Dice the onion, and grate the carrot on a coarse grater.

Place the vegetables in a frying pan into which you have poured vegetable oil. Cook them until tender over medium heat, and be sure to cover the pan with a lid.

Using a blender, puree the soft stewed vegetables.

Add salt, ground pepper, sugar, mayonnaise, and tomato paste. Mix everything well. Simmer the roe for 10–15 minutes over medium heat.

Pour vinegar into the finished caviar and mix it.
