
Zucchini caviar for winter (canning)
Description
A simple canning recipe. For the spread, finely chop the zucchini, onion, and garlic. Cook everything through. Add the spices, mayonnaise, and tomato paste, simmer again, then seal in jars. Good luck.

Prepare the necessary ingredients. Wash the vegetables. Peel the onion and garlic.

Cut the onion into quarters so it will be easier to chop later.

Cut the zucchini into pieces. If the seeds inside are old, remove them.

Pass the zucchini, onion, and garlic through the finest metal sieve on the meat grinder.

Boil for 1 hour. As soon as the caviar comes to a boil, reduce the heat and continue cooking. Stir from time to time.

After one hour, add the mayonnaise, salt, and spices.

Also add the tomato paste. Stir and cook for another 30 minutes.

Sterilize the jars and lids in advance. Divide the caviar among the jars and seal. Turn upside down until cooled. Then store in a cool place.
