
Store-Style Zucchini Caviar

You can easily put some away for winter, and to make it really delicious—the same as what you buy at the store—follow my tips. I'll say right away: why make zucchini spread yourself if you can buy it? First of all, homemade is homemade. It's healthier and often tastier too. Of course, you need to spend time and effort, but the result is worth it. So today I'm sharing a simple recipe with you. The appetizer is ready. Serve right away.

Prepare all the necessary ingredients. Peel and rinse the zucchini, onion, and carrots.

Cut the zucchini into small cubes so it fries quickly.

Chop the onion as finely as possible.

Grate the carrot on a grater.

In a deep skillet, heat the sunflower oil, add the onion and carrot, and sauté until the carrot is tender. Then add the zucchini and cook for a few minutes until they warm through and release their juices. Cover with a lid and simmer for 15 minutes, stirring occasionally.

Then add the tomato paste and salt, stir, and simmer covered for another 5–7 minutes.

Transfer the prepared caviar into the blender bowl and blend until paste-like.
