
Zucchini caviar without frying
Description
Perfect for winter pantry stocks. Spread is a very finicky product. It’s not hard to cook, but it must be stored in a cool place. Zucchini spread made without frying turns out soft and delicate in flavor. All vegetables are simmered for 1 hour, then spices, oil, and vinegar are added. Everything is cooked through and canned. Good luck. Store in a cool, dark place.

Wash and cut the zucchini. If the skin is tough, peel it off.

Grind them using whichever method is most convenient for you—you can use a meat grinder, blender, or grater.

Finely chop the remaining prepared vegetables.

Combine both vegetable mixtures and place on the stove. Bring to a boil and simmer over low heat for at least one hour. Stir from time to time so the caviar does not burn. Use non-stick or stainless steel cookware. It also turns out well in a kazan.

At the end of cooking, add salt, sugar, ground pepper, oil, and vinegar to the vegetables. Cook for another 15 minutes.

Arrange in sterile jars, cover with lids, and seal with a special canning key. Turn the jars upside down and leave until completely cooled. Then they can be stored in a cool place.
