Zucchini baked with garlic and tomatoes

Description

The recipe won't take much time. Line a baking tray with foil or parchment paper. You can also simply grease it with oil. Slice the zucchini and tomatoes into rounds. Grate the cheese and spread it on top. Don't forget the spices. Bake in the oven for no more than 10 minutes. Good luck! Serve with herbs and sauce.

    First, thoroughly rinse the zucchini under running water, place it on a cutting board, and slice crosswise into rounds up to 1 centimeter thick. Transfer the chopped vegetable to a plate.

    Next, rinse the tomatoes under running water, pat them dry with a kitchen towel, and place them on a cutting board. Using a sharp knife, slice them into neat rounds about 5 millimeters thick and arrange them on a separate plate.

    For this recipe, you can use any hard cheese of your choice. So, take a grater with small holes and grate the cheese. It's convenient to grate the cheese on a cutting board. Don't forget about the garlic — peel it and crush it in a press.

    Now preheat the oven to 170 degrees Celsius. Line a baking sheet with foil, brush it with vegetable oil using a kitchen brush, and arrange the zucchini slices. Salt each one and top with tomatoes. Then salt again, add black ground pepper and cheese.

    Place the appetizer in the oven for 5–10 minutes; during this time the cheese should melt completely and form a golden crust. As soon as that happens, turn off the oven and remove the baking sheet, using oven mitts.

    Using a kitchen spatula, spread the vegetable appetizer onto a nice serving plate, garnish with sprigs of herbs or lemon wedges, and serve. The zucchini and tomato appetizer can be served warm or cold; you can cut it into 4 pieces and skewer them on toothpicks so guests can eat it easily. A simple, fragrant vegetable dish is ready!
