
Breaded Zucchini
Description
Perfect for the table and with drinks. To be honest, I don’t even know which cuisine this breaded zucchini recipe belongs to, but that doesn’t matter — what matters is that the dish is incredibly delicious. The zucchini turn out with a fragrant, crispy crust; they pair wonderfully with wine and even beer, and I sometimes eat them just as they are, with tomato sauce. So if you’ve never tried this treat, I highly recommend making breaded zucchini at home — and the whole process will take you at most 40–50 minutes.

First, wash the zucchini under running water and pat them dry, then trim the ends and cut the zucchini into fairly large chunks.

Put the breadcrumbs into the blender bowl, add garlic, basil, water, salt, and pepper to taste, and blend until smooth. Coat the zucchini sticks in the resulting mixture.

Place the breaded zucchini on a rack and put them in an oven preheated to 220°C for 20–30 minutes. While baking, spray the strips with olive oil so they don’t dry out.

Once the zucchini develop a golden crust, you can take them out of the oven and serve. Enjoy your meal, everyone!
