
Stewed zucchini
Description
The dish is prepared without unnecessary complications. Stewed zucchini can be served as a side dish to meat or fish, or enjoyed on its own—it turns out quite filling and nutritious. It's best served with fresh herbs. As seen in the photo recipe, it's extremely simple to make, so stewed zucchini can be a great idea for an everyday lunch or dinner. Step 1

Wash the zucchini. If the zucchini is young, cut it into strips with the skin on; if it is mature, peel it first, then cut into strips.

Peel the carrots and grate on a coarse grater.

In a skillet, heat vegetable oil, add zucchini and carrots. Season with salt and pepper, and simmer covered over low heat for 25–30 minutes.

A few minutes before it's done, add finely chopped herbs, mix well, and simmer for another couple of minutes. Ready!
