
Zucchini with tomatoes in sour cream
Description
During vegetable season, this dish can be prepared with the addition of eggplants, cauliflower, or broccoli, and all variations turn out very tasty. It's best to use sour cream with a high fat content, as it is less sour and does not separate during cooking.

Prepare all the necessary ingredients. Peel the onion, carrots, and garlic, then wash them together with the remaining vegetables under running water and dry.

Heat vegetable oil in a skillet, add the chopped onion and carrot, and sauté for about 3 minutes until soft.

Cut the zucchini and tomatoes into medium cubes, transfer to a frying pan, cover with a lid, and simmer for about 10 minutes. Add water if necessary.

When all the vegetables are soft enough, add the pressed garlic, sour cream, salt, and pepper to taste to the skillet. Mix well, then simmer for another 2 minutes.
