
Stewed Zucchini with Carrots
Description
The dish is prepared without any unnecessary complications. When my niece was very little, my sister used to cook this simple and healthy dish for her. And even though the little girl has grown up, we still use this recipe for stewed zucchini with carrots—only now we cook it for ourselves. Despite having just two main ingredients, this side dish turns out incredibly delicious. I also add a bit of garlic, which makes it absolutely amazing—my husband especially enjoys it when I prepare this dish. And since summer is just around the corner, it's best to use fresh vegetables in this simple recipe for stewed zucchini with carrots, as they make the dish both tastier and healthier. The dish is ready to be served.

Grate the carrot on a coarse grater, and cut the zucchini into small cubes.

Now place the sliced vegetables into a pot and pour in water so that it doesn't completely cover them. Put it on the stove, and when the water comes to a boil, add salt and cook for a couple of minutes.

Add the sour cream, mix and simmer over low heat with the lid closed for about 25–30 minutes. Don't forget to stir the vegetables occasionally.

If desired, add garlic and fresh herbs to the finished dish. If preparing for children, blend the carrots and zucchini into a puree using a blender. Enjoy your meal!
