
Ukrainian-Style Zucchini

Perfect for winter preserves. I make Ukrainian-style zucchini at home every season — my family loves them. This recipe is quite simple, and the taste of the finished zucchini is amazing. Store in a cool, dark place.

1. I assure you that making Ukrainian-style zucchini at home is very simple. So, we wash our vegetables and peel them, then slice them into rounds no more than 6 mm in diameter.

2. Then wash again and drain in a colander; season with salt and pepper (optional, to taste). Meanwhile, heat the skillet.

3. Place the zucchini in vegetable oil and fry until done. Then transfer to a plate and let them cool.

4. While the zucchini are cooling, chop the dill. Dill will complement the flavor of the vegetables and make it even more piquant.

5. After the herbs, chop the garlic. In this case, it's better to chop it rather than press it through a garlic press.

6. Now arrange the fried zucchini in the jar, layering with dill and garlic. Then pour over the zucchini in a thin stream (also pour 1 teaspoon of oil into the bottom of the jar). Sterilize the jars for 15 minutes (mine were half-liter jars). Seal the lids, turn the jars upside down, and cover with a blanket. That’s it — the next day, move the jars to the cellar or pantry.
