This recipe won't take much time. Many home cooks underestimate zucchini, using them only for simple everyday dishes. Today, I'd like to share with you an excellent recipe for zucchini Parmigiana. This wonderful dish has such an amazing, sophisticated flavor that even the most demanding gourmet will appreciate it. You can prepare these zucchini for a family dinner or serve them at a festive table—I'm sure everyone will love them without exception. Since it's summertime and fresh vegetables are abundant, definitely try making this aromatic and incredibly delicious dish. Preparing zucchini Parmigiana at home is incredibly easy. 1) First, wash the zucchini and trim off the ends. Then slice the zucchini lengthwise into pieces about 0.8–1 cm thick. 2) Next, prepare the sauce. Pour olive oil into a skillet and add chopped onion, garlic, and dried oregano. Sauté over medium heat for 7–10 minutes. Mash the canned tomatoes (in their own juice) with a fork until smooth, then add them to the skillet with the onion and garlic. Mix everything and simmer, covered, for 15 minutes. At the end, season the sauce with salt and pepper, and add a little vinegar and basil. 3) In another skillet, pour olive oil and sear the zucchini slices on both sides until golden brown. A grill pan works best, but a regular skillet is fine too. 4) Take a baking dish and spread about half of the sauce over the bottom. Sprinkle half of the grated Parmesan cheese over the sauce. Arrange the zucchini slices on top, then pour the remaining sauce over them and sprinkle with the rest of the Parmesan. 5) Place the dish in a preheated oven at 190°C (375°F) and bake until a fragrant, golden crust forms on the surface.
