
Lithuanian-Style Zucchini

I think you'll like this Lithuanian-style zucchini recipe as much as I do. The combination of tomatoes and zucchini is very interesting on its own, and with piquant onion added, the appetizer is beyond all praise! So I'll tell you how to make Lithuanian-style zucchini. Store in a cool, dark place.

1. Peel the tomatoes and run them through a food mill or meat grinder. Transfer the purée to a saucepan and add salt, sugar, vinegar, and vegetable oil. Set over medium-high heat. Slice the zucchini into thin pieces and add them to the saucepan as well.

2. Let the vegetables simmer. Stir them periodically. After 15 minutes, add the onion, sliced into half-rings. Simmer for another 8–10 minutes.

3. Done! You can let it cool and serve right away...

4. Or you can seal them in sterile jars for the winter. If you decide to can them, sterilize the jars with zucchini for 8–10 minutes, then seal tightly. Turn the jars upside down and leave them that way until they cool, wrapped in a towel, then store in a dark, cool place—a cellar or a dark room.
