
Italian-style zucchini
Description
The recipe won't take much time. Minimal expenses and two hours of time—and you won't need Italy at all! Preparing zucchini Italian-style at home is very easy! This dish is not only delicious but also very healthy, especially in summer during the vegetable season. Serve hot.

1. Start by cutting the zucchini. The cubes should be of medium size.

2. Also, cut the onion into cubes, but smaller in size. Fry it in vegetable oil until a light golden color appears.

3. Add the zucchini to the onion halfway through frying and cook until done. While the vegetables are frying, prepare the sauce: dilute the tomato paste with a small amount of water (50-75 ml), add sugar and vegetable oil (olive oil can be used).

4. Mix our sauce and add spices. I usually use basil and oregano. Now place the sauce over low heat and cook for about 5 minutes. At the end, add garlic and, if desired, a tablespoon of lemon juice (optional). Simmer the sauce for a few more minutes, then remove from heat.

5. Pour the sauce over the zucchini and simmer for about 10 minutes. Remove from heat and let cool slightly.

6. Take baking foil and place it on a medium-sized skillet or on a regular baking pan.

7. Place the zucchini in sauce onto the foil and sprinkle with chopped boiled egg. Add salt and pepper if needed.

8. Now it's time to sprinkle with cheese and herbs, then place the dish in an oven preheated to 180 degrees. Bake the zucchini for no more than 15 minutes.

9. This is the beauty you end up with, and the aroma is simply indescribable! I often treat my family and even guests to this wonderful hot dish. Italian-style zucchini can also be served cold at home.
