
Zucchini for Winter without Sterilization
Description
Winter preserves at home. This recipe for winter zucchini without sterilization is designed, in principle, for three three-liter jars, so if you have questions about where and how much seasoning to add, simply divide the ingredient amounts in half. In general, every homemaker has her own secrets, so I won’t presume to be a mentor here—I think, knowing, the preserve is ready for winter storage.

1. Wash the zucchini and tomatoes, then pat them dry. Cut the zucchini into thick slices, and use a shot glass to scoop out the center with the seeds.

2. Now insert a small tomato into each of the rounds you’ve made.

3. Put the water on to boil (2.5 liters for a three-liter jar). On the bottom, layer the herbs, garlic, pepper, and horseradish. Pack in the zucchini and tomatoes tightly.

4. Pour boiling water into the jar, cover with the lid, and let stand for 10 minutes, then pour the water into a saucepan with sugar and salt. When it boils, pour it into the jar, add vinegar, seal, and turn upside down.

5. When the jar has cooled, you can turn it upside down and store it in the cellar until winter.
