Perfect for stocking up for winter. In general, this classic recipe for canned zucchini for winter is a great fit for anyone who loves traditional flavor combinations. But if I, for example, prefer something original and new, I always add cloves, ginger, and turmeric on top of the standard set of spices — that way the contents of each jar will be a little different, and home-canned zucchini for winter will satisfy even the most finicky gourmet.     1. Wash the zucchini well, and if you have large, old ones, it's better to peel off the tough skin.

    3. Sterilize the jars (I had two 2-liter jars) and place a bay leaf, whole peppercorns, horseradish, and a couple of garlic cloves on the bottom.
