
Zucchini and Pattypan Squash for Winter
Description
These zucchini and pattypan squash for winter make simply an outstanding appetizer! They're fresh and juicy. In short, an excellent salad—not too rich and not too sour. You can barely taste the vinegar! Give it a try. Jars keep for up to a year in a cool place.

Step 1

1. Grate the carrots (a Korean-style carrot grater works well). Cut the onion into thin half-rings. Peel the pattypan squash and zucchini and dice them. Place all the vegetables in a container. Press the garlic through a garlic press and add it to the bowl as well.

2. Now make the marinade mixture separately: vinegar, oil, sugar, salt, and pepper. Mix thoroughly so the sugar dissolves. Pour the marinade over the vegetables and mix. Let stand for 2.5 hours.

3. Pack the salad into sterilized jars, sterilize for 15 minutes, seal for winter storage. Done!
