
Zucchini stuffed with chicken mince
Description
We make zucchini into little bowls, and prepare the filling from the remaining ingredients by sautéing them in a pan. Then we stuff the zucchini and place them in the oven. Bake for 20 minutes. Stuffed zucchini with chicken mince are ready and waiting to be served! Don't keep them waiting—sprinkle with fresh herbs and serve immediately.

Wash the tomatoes, blanch them, and remove the skins. Cut into cubes. Peel the onion and also cut it into cubes.

Grate the carrots on a coarse grater. Take a skillet with high sides. Sauté the onion and carrots in vegetable oil for 2 minutes, then add the tomatoes and cook for another couple of minutes.

Place the minced meat on the skillet and simmer with vegetables for about 20 minutes. Add salt and spices to taste.

Cut the zucchini into rounds, then use a teaspoon to remove the center of each, leaving the bottom intact. This will create little zucchini "cups" as shown in the photo. Lightly sauté the "cups" on a dry hot skillet, browning the bottom and sides. Then add a little water to the skillet and simmer for 10 minutes.

Prepare a baking dish, grease it with vegetable oil, and place the zucchini inside. Use a teaspoon to distribute the filling. Pour a little water into the dish.

Press the garlic through a garlic press, mix with mayonnaise. Spread this mixture over the zucchini with the filling.

Grate the cheese and generously sprinkle it over the zucchini. Bake in the oven for 15-20 minutes.
