
Zucchini stuffed with meat and cheese

Step 1

First, heat a skillet and add the ground meat along with half of the diced onion. Sauté until golden brown, then add spices and salt to taste. Transfer the cooked meat to a plate and discard the excess fat from the skillet.

Cut the zucchini in half and carefully scoop out the flesh with a spoon (do not discard the flesh). The width of the resulting zucchini boats should be about 1-1.5 cm, not thinner.

Now transfer the zucchini to a saucepan, pour water over them, add a little salt, and simmer for about 3-5 minutes after the liquid comes to a boil.

Wipe the skillet in which the meat was fried with a paper towel and place it back on the heat. Add the chopped zucchini flesh and the remaining onion, season with spices, add salt, and simmer over low heat for 7–10 minutes.

When the zucchini flesh becomes soft, add the fried minced meat, one-third of the mozzarella, chopped cherry tomatoes, and breadcrumbs. Mix everything together and simmer over low heat for a couple of minutes, then add the Parmesan and continue heating the filling until the cheese melts.

Grease the baking dish with vegetable oil and place the zucchini in it, filling them tightly with the prepared stuffing.

Generously sprinkle the remaining cheese on top.

Place the pan in a preheated oven at 180 degrees for 30-35 minutes.
