
Zucchini boats baked in the oven with vegetables
Description
The dish is prepared without unnecessary complications. This recipe for zucchini boats baked in the oven with vegetables was originally meat-free and completely vegetarian. However, in my opinion, the vegetable filling turns out a bit dry, doesn't hold together, and tends to spread apart. Therefore, I recommend adding ground meat, or eggs, or sour cream to "bind" the ingredients. Give it a try—it's delicious. The finished dish can now be served.

1. Wash the zucchini (or zucchini, as I have), cut them in half lengthwise, and use a knife to remove the center to create "boats."

2. Rub the zucchini with salt. In a blender, grind the onion, chili pepper, bell pepper, and garlic. Next, add the vegetable purée to the meat mixture and mix well. Finally, add chopped olives and pine nuts. Add spices to taste. Stuff the "boats" with the mixture.

3. Bake for 40 minutes at 180 degrees in the oven. Serve with homemade adjika or fresh vegetables. Delicious!
