Description
If you happen to have some chanterelles, it's best to use these mushrooms to prepare something truly delicious, such as homemade chanterelle julienne. In this recipe, I'll share my own version of julienne, slightly different from the original, adjusted to my personal taste preferences. However, the dish made according to this simple chanterelle julienne recipe turns out so exquisite that it's almost impossible to describe its wonderful flavor in words.

First, we need to peel the onion and boil the chanterelles, as well as prepare all the other ingredients.

Next, we finely chop the onion and sauté it in vegetable oil until golden brown. Add the sliced mushrooms and cook for 5 minutes. Then pour the cream into the pan, season with salt and pepper to taste. Grate the processed cheese on a coarse grater, add it to the pan, mix everything together, and continue simmering the mushrooms until the cheese has completely melted.

Arrange the mushrooms together with the sauce into baking dishes—cocottes are best, but you can use any other ovenproof dish. Sprinkle the chanterelles on top with hard cheese grated on a coarse grater, then place the dishes in a preheated oven at 180 degrees for 5 minutes.

As soon as the cheese melts, you can remove the soufflé from the oven and serve it at the table. Enjoy your meal, everyone!
