    Preheat the oven to 400 degrees. Add oil and heat a saucepan over medium heat; sauté the onion until golden. Add salmon cubes to the saucepan and season with salt and pepper. Mix the fish with the sautéed onion and set the saucepan aside.

    In another small skillet, add the flour and pour in cream until the consistency is like thick cream. Season the mixture with salt and pepper to taste. Mix the finished mixture with the fish and onion.

    Next, divide the julienne among individual cocottes. Sprinkle grated cheese on top (grated on a medium grater) and bake in the oven until the cheese is fully melted, about 8–9 minutes, at 180°C.
