Description
Making zhent won't be difficult at all. With modern equipment, you can grind the millet in just a few minutes. Then simply mix the remaining ingredients and chill thoroughly. The chilling process is very important, as the dessert may crumble if not cooled enough. Zhent can be stored at room temperature for up to 2 days, and in a cool place for up to 2 weeks. At room temperature, the dessert may crumble slightly but will still hold its shape.

Prepare the necessary ingredients.

Pour the millet into a frying pan and, stirring constantly, fry until slightly browned. A pleasant nutty aroma should appear.

Cool the millet and grind it in a coffee grinder into flour. This is "takal."

Over low heat, melt the butter with the sugar until the sugar crystals dissolve. Do not let the sugar caramelize!

Add raisins, butter with sugar to the millet flour and quickly mix, avoiding the formation of lumps.

Rub the resulting mass well by hand.

To shape the dessert, take a springform or deep rectangular mold. Place the mixture into the mold and press it down firmly with your hands. Put the mold in a cool place and leave it there ideally until the next day.
