
Jelly
Description
The recipe won't take much time. For the jelly, it's best to use raw raspberries mashed with sugar. You can also use cranberries, guelder-rose berries, or red currants. It's the raw berries that give a delicate pink color, while cooked jelly turns a brownish hue. For decoration, you can use various dried fruits, nuts, marshmallows, or prepare several varieties of colored jelly. Serve chilled.

Prepare the ingredients.

Mix sour cream with raspberries. The raspberries are raw, mashed with sugar.

Mix and adjust the color. The mixture will become slightly lighter after adding gelatin, so add a bit more raspberry to achieve a brighter color. Warm the mixture to 35 °C.

Pour hot water (80°C) over the gelatin and stir until completely dissolved.

Pour the melted gelatin through a sieve into a bowl with sour cream and raspberries. Mix well.

Pour the jelly into molds and place in the refrigerator for 25–30 minutes. Also, pour a little jelly into a small bowl. We will use this jelly later for decoration.

You can make a little more raspberry jelly as well, for decoration. I tried making flower shapes from this jelly and from ready-made marshmallows. The second option is easier and faster, so I went with that. However, the raspberry jelly works too.

The jelly has set, remove it from the molds and place it on a flat plate or dish.

Cut the marmalade, make holes in it, and place it on the jelly.

The jelly in the small saucer is cut into 10 pieces. (Cut it like a pie, into triangular pieces.) Add the ears, as shown in the photo.
