1. Wash the cherries thoroughly, remove the pits, and cover with sugar. Place over heat and, once the sugar has completely dissolved, add 0.5 liters of water. Bring the mixture to a boil.

2. After simmering the jam for about an hour over very low heat, gradually add the diluted gelatin (previously soaked in warm water 20-30 minutes before adding to the jam).
