Raspberry Champagne Jelly

Description

The dish is prepared without unnecessary complications. This unusual champagne jelly served in glasses will undoubtedly make a splash at any party. It's the perfect dessert for New Year's celebrations. Especially convenient is the fact that the jelly can be prepared in advance, up to 2 days ahead. If you lightly mash the raspberries with sugar, the jelly will acquire a pleasant rosy hue. The dessert is ready to be served.

    1. Place the raspberries, ¼ cup sugar, and 1 tablespoon lemon juice into a bowl. Gently stir all ingredients together. Let stand at room temperature, stirring occasionally, until the raspberries release their juice, about 20–30 minutes.

    2. Pour ½ cup of champagne into a small bowl. Sprinkle the gelatin over the top and let stand for 5 minutes, until the gelatin softens. Bring 1 cup of champagne to a boil, then add the remaining ½ cup and 2 tablespoons of sugar. Cook, stirring, until the sugar dissolves completely. Remove from heat, add the gelatin mixture, and stir until fully dissolved. Pour the mixture into a large bowl. Add the raspberries with their juice, the remaining champagne, the remaining 1 tablespoon of lemon juice, and orange blossom water (if using). Stir until the sugar dissolves.

    3. Divide the raspberries evenly among glass champagne flutes using a spoon. Pour the champagne and gelatin mixture evenly into the flutes, filling each with approximately ¾ cup. Chill the jello until set, about 3 hours. The jello can be prepared up to 2 days in advance, covered with a lid, and stored in the refrigerator.
