
Meat Broth Jelly

Prepare the listed ingredients. Rinse pig's feet or hocks, or a piece of pork belly—but be sure it still has the skin on—in water. Peel the carrots and onion and rinse them.

Place the meat pieces in a kazan or pot and add the vegetables cut into pieces; they will give the broth a bright flavor and aroma. Sprinkle in the bay leaves.

Pour in hot water and place the pot on the stove. Bring the liquid to a boil and simmer for 10–15 minutes, then skim off the foam with a slotted spoon. Reduce the heat and stew the meat in the broth for about 1.5 hours, covering the pot with a lid.

Add the salt and seasoning. You can also add other spices and seasonings. Peel the garlic cloves and press them into the broth.

Remove the legs from the broth and pour the broth into a silicone mold or a container with high sides.

First, let the meat broth jelly cool to room temperature, then place it in the refrigerator to set for 2–4 hours.
