
Cloudberry Jelly
Description
Perfect for winter pantry stocks. Cloudberry jelly is a very beautiful jelly-like jam in an appetizing amber color. It is slightly tart, which makes this jelly interesting and refreshing. It is very easy and fairly quick to prepare. First, clean the berries of their hulls (which can be dried and used for herbal infusions), rub them through a sieve to separate the seeds, then mix with sugar and simmer over the lowest heat for about 40 minutes. Very simple and brilliant :) Good luck, and your preserve is ready for winter storage.

Remove the stalks and husks from the cloudberries and rinse under running water.

Rub the cleaned cloudberries through a sieve.

Separate the liquid berry pulp from the pits. You should end up with approximately 700 grams. Add 1 kg of sugar to this pulp and mix.

Pour the mixture into a saucepan and cook over the lowest heat for about 40 minutes, stirring occasionally with a wooden spoon.

Pour the hot cloudberry jelly into two half-liter jars and seal them. Done!
