No-Cook Raspberry Jelly

Description

Raspberry jelly without cooking is quite simple to make. For this we use the freshest raspberries, a little apple juice, and honey. It is best to use liquid honey, as it dissolves more easily and quickly. Store uncooked raspberry jelly in the refrigerator. We prepare this dish as healthfully as possible, preserving nutrients and not heat-treating the ingredients so they keep their natural qualities. Therefore, the shelf life of this jelly is not very long—about up to 2 months. On the other hand, the original qualities of the products are preserved to the fullest.     Puree the raspberries. There are two ways: either blend them or push them through a sieve. The difference is that with the second method, the jelly will be seedless.

    The mixture turns out quite thick; you can add a little apple juice while rubbing. Warm the honey slightly, for example in a double boiler, but do not boil it under any circumstances! The honey should become soft or liquid (which is preferable).

    Transfer the raspberries to a saucepan, add the honey and a little apple juice, and stirring, set over the lowest heat to warm gently until the honey has completely dissolved. Again! Do not boil under any circumstances.

    Then transfer the finished raspberry jelly into a jar, seal it, cool completely, and refrigerate. Done!
