
Gooseberry Jelly for Winter
Description
Perfect for winter preserves. This is a classic gooseberry jelly recipe for winter; however, you can also add other berries to taste if you wish. You can reduce the amount of sugar slightly if the gooseberries are very ripe and sweet. This jelly will be not only a tasty, natural treat but also immune support in winter. Serve at the table or store in the pantry.

1. First, wash the berries thoroughly and pat them dry lightly. With small scissors, trim the stems from both ends and put the gooseberries into a saucepan or jam-making container.

2. Add water and place the berries over heat. Bring to a boil and simmer over low heat for about 15 minutes, stirring gently from time to time so as not to damage the berries too much. If desired, you can use berries pre-puréed in a blender for this winter gooseberry jelly recipe.

3. After 15 minutes, you can add the sugar and stir gently again. Once the sugar has been added, try not to let the jelly come to a boil (if necessary, remove from the heat for a couple of minutes).

4. Boil gooseberry jelly for winter at home until it begins to thicken slightly. On average, 7 to 20 minutes.

5. Prepare the jars in advance. Wash them thoroughly, sterilize them, and keep them warm. Remove the finished jelly from the heat, let it stand for 3–5 minutes, then pour it into the warm jars.

6. This jelly also keeps well in the refrigerator, so if you have any left over, that's fine. You can transfer it to a clean jar and cover it with a lid after it has cooled.
