The dish is prepared without unnecessary complications. To be honest, I probably wouldn't have thought of making melon jelly at home myself, but my friend strongly recommended I give it a try. And indeed, the jelly turned out incredibly delicious and not as overly sweet as the melon itself. Plus, the aroma was so amazing that you could almost get full just by smelling it. Anyway, now I highly recommend you try this simple melon jelly recipe—believe me, this dessert turns out exquisite, very bright, sunny, and beautiful. The ready dessert can be served at the table.

First, remove the rind from the melon (do not throw it away), discard the seeds, and cut the flesh into small cubes.

Pour water into a saucepan, add sugar, and bring the mixture to a boil. Add the melon with its rind into the boiling water and cook for 5–10 minutes, depending on the melon's firmness.

Soak the gelatin in a small amount of water, leave it to swell, then heat the gelatin in a water bath until the granules are completely dissolved. Separate the melon from its juice, discard the rind, and mix the juice with the dissolved gelatin and citric acid, stirring well.

Now we place the melon into molds and pour the gelatin mixture over it. Once the liquid has cooled, the molds should be placed in the refrigerator until the jelly has completely set.
