
Cranberry jelly
Description
Cranberry jelly has a very rich, slightly tart flavor. This dessert will appeal not only to children but also to adults. Jars of cranberry jelly can be stored for a long time, and during winter this treat is an excellent way not only to indulge yourself, but also to fight off infections, as cranberry jelly contains plenty of vitamins and beneficial substances for the body.

Place all our berries into a deep saucepan, briefly pour over with boiling water. Drain the water, leaving just a small amount of boiling water at the bottom together with the berries. Then, using a pestle, mash the berries into a puree. Warning: do this carefully — the berries splatter a lot.

Strain the lingonberry purée through cheesecloth.

After simple straining by hand using gauze, squeeze out all the juice from the cranberries. Don't hesitate to press as hard as you can—the more you extract, the better.

You will end up with approximately 5 cups of premium lingonberry juice. Add sugar to it, place over heat, and cook until the sugar dissolves completely. As soon as the liquid comes to a boil, add gelatin and continue cooking for a few more minutes over low heat, stirring constantly.

Pour the resulting liquid into clean, dry jars. Seal the jars, boil them for 10-15 minutes, then set aside for storage. The cranberry jelly is ready!
