First of all, quince, of course, needs to be washed and dried; prepare all the other ingredients as well.

Next, we remove the cores and stems from the fruits, then cut the quince into small pieces. After that, we need to weigh the quince, as the amount of water will be measured based on the weight of the cleaned fruit.

For each kilogram of quince, add 700 grams of water and one teaspoon of lemon juice. Place the pot with these ingredients over heat, bring the mixture to a boil, then simmer the quince for 1 hour over low heat.

After that, transfer the resulting mass into a fine sieve (you can also line it with gauze) and leave it for 2 hours so that the juice drains completely.

After the time has elapsed, the amount of quince juice obtained should also be measured.

Pour the juice into a saucepan and add 500 grams of sugar per kilogram of juice. Place the saucepan over heat, bring the liquid to a boil, and cook for 1-3 minutes.
