Description
Perfect for the table and with drinks. Zhau-burek is a remarkable dish seasoned with hot spices and stuffed with offal filling. As for the grain, you can use buckwheat or rice. The lamb stomach is stuffed with a filling of liver, hearts, and vegetables. Zhau-burek is served cold or hot as an appetizer or main course.

1. It is very important for preparing this dish to thoroughly prepare the stomach: wash it, clean it on both sides, and painstakingly scrape it clean. Since the stomach is quite large, it can be stuffed for a large family or event. The filling is usually minced offal mixed with fat, grain (rice or buckwheat), diced bell pepper, onions, and essential spices. Black ground pepper, paprika, and thyme go well among the spices. Salt and season to taste.

2. Stuff the stomach, then pack it very tightly and tie it (so that the string does not come undone).

3. Place the stomach in water, then boil it for about two hours until it becomes tender. Don't forget to make several needle pricks over the entire surface.

4. When the stomach is cooking, it is very important that it does not scorch (place several spoons or lids on the bottom). The stomach releases a lot of gelatin during cooking, so there is a high risk of it scorching or sticking. Once it is cooked, let it cool slightly; then it can be sliced and served.

5. Cooled zhau-burek is no less tasty and aromatic. Serve the dish as a main course or appetizer. It can be served with fresh vegetables.
