Italian-style stew
Description
The recipe won't take much time. Neck meat works best for the stew, and you can use regular pork fat instead of bacon. If you don't have tomatoes in their own juice, substitute them with fresh ones, removing the skin and seeds. If honey is not suitable for any reason, add regular or cane sugar to taste. Serve hot.
Instructions
- 1
Step 1

Prepare all the necessary ingredients for making Italian-style stew.
- 2
Step 2

Cut the bacon into pieces, place on a hot skillet, and fry until the fat renders out. Remove the fried bacon to a plate.
- 3
Step 3

Peel the garlic, place it on a cutting board, lay the knife flat on top, and crush it. Place in the hot fat and fry for 2 minutes on each side. Remove the garlic, as we will no longer need it.
- 4
Step 4

Wash the pork, dry it, and cut into large pieces. Place the meat in a frying pan, making sure it is in a single layer.
- 5
Step 5

Sear without disturbing for 1 minute. Then continue searing, stirring, until golden brown on all sides.
- 6
Step 6

Peel the onion and cut it into slices. Add them to the pan with the fried meat.
- 7
Step 7

Sauté everything until the onion becomes golden.
- 8
Step 8

Add the tomatoes in their own juice, cut into pieces, to the frying pan.
- 9
Step 9

Add rosemary, salt, and pepper.
- 10
Step 10

Return the fried bacon to the pan and mix.
- 11
Step 11

Reduce the heat to the lowest setting, cover the pan with a lid, and cook for one hour, stirring occasionally and making sure it doesn't burn. Add a little water if necessary.
- 12
Step 12

After cooking, if necessary, add honey and mix.
- 13
Step 13

Dilute the starch in 50 milliliters of water and pour it into the pan, stirring. Cook until thickened, about two minutes, and serve.
- 14
Step 14

Serve at the table.
