
Apple, Onion, and Squash Stew
Description
The dish is prepared without unnecessary complications. Preheat the oven to 170°C. Heat 2 tablespoons of oil in a skillet over medium heat. Add leek and 2 tablespoons of water, season with salt and pepper. Cook, stirring, until the leek begins to turn brown, about 10 minutes. Add sherry and sage, and cook until the liquid thickens, about 3 minutes. Set aside. In a small baking dish, layer the squash and season with salt and pepper. Evenly distribute the leek mixture over the squash. Arrange the apples over the leek layer. Drizzle the apples with the remaining oil. Cover tightly with aluminum foil. Bake for 45 minutes. Remove the foil and sprinkle cheese on top. Increase the oven temperature to 230°C and bake for 10 minutes, until the cheese is melted and golden brown. Let stand for 10 minutes before serving. Serve with sage. The dish is ready to be served.
